Traditional Elk Stew

This traditional Elk Stew recipe was submitted via “Ɂełnélixʷs” Facebook group, a Spokane Tribe grassroots food sovereignty/safety group. 

“Ɂełnélixʷs” in “ńpoqińišcn” (the Spokane language) means “their food; the food by which they are known.”

The peoples of the northeastern Columbia Plateau have been able to utilize their local and neighboring regions’ resources to live in a truly sustainable fashion. This group provides a place to converse, work, and share information about food sovereignty/safety and the peoples ability to access healthy and traditional foods.

Ingredients

  • Stew meat (elk)
  • Flour
  • Bacon Fat
  • Potatoes, chopped
  • 1 Onions, chopped
  • 2 Carrots, chopped
  • Celery, chopped
  • Tomatoes, chopped
  • Cabbage (optional), chopped
  • Salt
  • Pepper
  • Sage
  • Garlic Powder

Instructions

  1. Mix enough flour and spices (to taste) to cover stew meat.
  2. Put this mixture and meat in a dish with a tight fitting lid or zip lock baggy and shake well.
  3. Sear meat in a stew pan with hot bacon fat.
  4. Add a little water and the remainder of the ingredients. Bring to a boil and turn down to simmer until vegetables and meat are fully cooked.
